Sausage Cakes with Mushroom Sauce


  • 1 large onion
  • 1 clove garlic
  • 500 g (1 Ib.) sausage mince
  • 1 tablespoon chopped parsley
  • 2 eggs
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon mixed herbs
  • 30 g (1 oz.) butter
  • 30 g (1 oz.) butter
  • 60 g (2 oz.) mushrooms
  • 2 teaspoons soy sauce
  • 2 tomatoes
  • 1 1/2 tablespoons flour
  • 1 tablespoon chopped parsley
  • 1 teaspoon vinegar
  • 1 cup water
  • salt, pepper


  1. Combine sausage mince, peeled and finely-chopped onion, crushed garlic, parsley, eggs, oregano, thyme and mixed herbs; mix well.
  2. Season with salt and pepper. Drop tablespoons of mixture into hot butter, cook until golden brown on each side and cooked through. Remove from pan, keep warm.
  3. Serve with Mushroom Sauce.
  5. Melt butter in pan, add sliced mushrooms, saute until soft. Add flour, stir until combined, remove pan from heat. Add water, peeled and chopped tomatoes, vinegar, and soy sauce, stir until combined. Return pan to heat, stir until sauce boils and thickens. Add parsley, season with salt and pepper. Simmer sauce, uncovered, 2 minutes.
